Tequila vs Mezcal
Mezcal and Tequila are both Mexican spirits made from agave, but they have differences. Tequila is primarily made from blue agave and is produced in specific regions, while mezcal can be made from various types of agave and has a broader range of production areas. Mezcal is often known for its smoky flavor due to the traditional production process, which involves roasting the agave in underground pits. In contrast, Tequila tends to have a cleaner, more straightforward taste profile.
Mezcal Production, Story of Land

Mezcal is a story of land, tradition, and resilience. Its journey begins with the agave, a plant that takes up to eight or even twelve years to mature under the sun of Oaxaca and other regions of Mexico. The piñas are then roasted in underground earthen pits lined with volcanic stones, a process that infuses mezcal with its signature smoky depth. the agave fibers are left to ferment naturally, guided by the local yeast of the environment. Finally, the liquid is distilled in small copper or clay stills, resulting in a spirit that carries the taste of the land and the soul of Mexico.
